Kiviak

Traditionelt Inuit fad af gærede havfugle (søkonger) i det nordlige Grønland. For at forberede en kiviak skal flere hundrede små alkefugle jages. Derefter pakkes de tæt ind i en taske af sælskind (kødet bliver fjernet, og fedt er tilbage – dette gør fuglenes kød mørt ). Huden er syet og smurt rundt med tætningsfedt som afstødningsmiddel til fluer. Derefter opbevares kiviak under en bunke af sten for at gærre i nogle måneder. Det virker som en beskyttelse mod dyr, og tillader gassen at flygte under fermenteringsprocessen (sømmen af posen skal vende opad).
